Puttanesca Sauce



2 Tsp olive oil

1/3 cup fine chopped onion

2 garlic cloves, minced

1 tbsp capers rinsed

1/3 cup green olives pitted and halved

1/3 cup black olives, pitted and halved

2 cups marinara

¼ tsp dried red pepper flakes


Combine first 3 ingredients and sauté for 1-2 minutes. Add remaining ingredients and simmer for 15-20 minutes. Serve over pasta. Can add chicken or seafood to sauce.

    I love when I make something that draws me back to cokoing, when I can make something nourishing for myself, when family & friends enjoy the fruits of my labor. This soup did it. It was an unassuming recipe, but there’s a lot of bang for your buck. The chipotle in adobo sauce gives it such full body. I added some frozen organic corn as well. Thank you, Pam!
